Apples, Apples, Apples! {closed}

One of my favorite family traditions we started when our son was a baby is visiting Stone’s Apple Barn in the fall to go apple picking.  This Saturday was a beautiful day to visit Stone’s, and spend the morning in the orchard.  In addition to picking your own apples, you and your children can go on a tractor-pulled hayrack ride, visit the animals and pick up some great goodies in the store.  We usually make more than one trip in the fall to get some of their delicious apple butter and jams.

When you pick your own apples at Stone’s Apple Barn, there is a 20 lb minimum, so you will be heading home with plenty of apples!  I spent Saturday afternoon with my mom peeling and cutting apples for a crock pot full of delicious applesauce and bags of frozen apple slices to save for apple crisp later this fall.  In addition to my traditional recipes, I decided to try out a few new apple recipes to share with all of you!

Apple-Jack Chicken Pizza

This unique pizza recipe was delicious and one that all of us eating said we’d order at a restaurant.  I used the green onion only on half, and with the caramelized onion, you could definitely leave it off all together.  Even my two-year-old loved this pizza, giving it an enthusiastic, “Mmmm…delicious!”

Ingredients:

3 tablespoons of butter

2 sweet onions, very thinly sliced (I only used one large onion)

1/2 teaspoon dried thyme leaves

1/8 teaspoon salt

1/8 teaspoon pepper

1 can refrigerated pizza crust

1 unpeeled large red apple, thinly sliced (I used Braeburn)

1/2 teaspoon sugar

3 cups cubed cooked chicken breast (I used closer to 2 cups)

1/3 cup cooked real bacon bits

2 medium green onions, sliced (optional)

1 1/2 cups shredded Cheddar cheese

1 1/2 cups shredded Pepper Jack cheese

Directions:

  1. In 12-inch skillet, melt 2 tablespoons of the butter over medium heat. Add sweet onions and thyme; cook about 20 minutes, stirring occasionally, until soft and golden. Stir in salt and pepper. Remove onions from skillet; set aside.
  2. Heat oven to 425°F. Spray large cookie sheet with no-stick cooking spray. Unroll pizza crust dough on cookie sheet; press dough into 14×10-inch rectangle. Bake 7 to 11 minutes or until light golden brown. Reduce oven temperature to 375°F.
  3. Meanwhile, in same skillet, melt remaining 1 tablespoon butter over medium heat. Add apple and sugar; cook 4 to 6 minutes, stirring occasionally, until sugar is melted and apple is slightly soft.
  4. Spread onion mixture over partially baked crust. Top evenly with chicken, apple mixture, bacon, green onions and cheeses.
  5. Bake 10 to 20 minutes longer or until cheeses are melted and crust is golden brown.

Country Apple Dumplings

Some of the best recipes I’ve made are recipes given to me by friends and family.  This amazing dessert was passed on to me by friend and fellow QCMB writer Heather Stocking.  Despite her glowing recommendation and all of the great reviews online, I still wasn’t fully prepared for how delicious these dumplings would be.  If you only choose to make one of the recipes from this post, make sure this is the one!

Ingredients:

2 large green apples, peeled and cored (I used Golden Delicious)

2 (10 ounce) cans refrigerated crescent roll dough

1 cup butter

1 1/2 cups white sugar

1 teaspoon ground cinnamon

1 (12 fluid ounce) can or bottle Mountain Dew

*I cut this recipe in half.

Directions:

  1. Preheat the oven to 350°F. Grease a 9×13 inch baking dish.
  2. Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end.  Pinch to seal and place in baking dish.
  3. Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew over the dumplings.
  4. Bake for 35-45 minutes in the preheated oven, or until golden brown.  Since I cut the recipe in half, I only needed to bake for 30-35 minutes.

Grilled Apple and Swiss Sandwich

This recipe is a fun twist on the traditional grilled cheese!  The sandwich is great for lunch, but with the sweet bread and apples, could also be a tasty breakfast.

Ingredients:

2 slices of brown sugar-cinnamon bread

1-2 teaspoons butter

1/2 green apple, thinly sliced (I used Golden Delicious)

2 slices Swiss Cheese

Directions:

  1. Preheat a skillet over medium heat.
  2. Lightly brush one side of each slice of bread with the butter.
  3. Place one slice of bread (butter-side down) into the skillet.  Place one slice of cheese on the bread, arrange apple slices on top of the cheese and place second slice of cheese on top.  Top with remaining slice of bread, butter-side up.
  4. Cook until the bread is golden brown, then flip the sandwich over and cook until the other side is golden brown and the cheese has melted.

Crock Pot Pork with Apples

This is an easy and delicious recipe for a cool fall night.  The pork is very tender and the apple topping adds the perfect amount of flavor.  I served with au gratin potatoes and corn on the cob, which were great compliments to this sweet pork dish!

Ingredients:

1 pork roast

3 apples (cored and cut into pieces)

3/4 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

Directions:

  1. Core and cut apples into pieces.  Place in crock pot.
  2. Mix sugar, flour and cinnamon in bowl and coat pork with it.  Place pork on top of apples.  Sprinkle remaining mix on top.  *I only used about 3/4 of the remaining mix.
  3. Cook on low for 6-8 hours.

After all of my cooking and freezing, I still have plenty of apples left over and would love to try your favorite apple recipes.

    Yummy recipes!!! One of my favorites it to bake pork chops with apples. Just slice up some apples, put one pork chop on a sheet of foil (spray it first), sprinkle some seasoned salt on the pork, then put a handful of apples on top. Fold the foil into a packet (leaving some room for air inside) and bake in oven at 350 for about 30-40 min. They are delicious!

    I’ve been wanting to get my kids to an apple orchard this fall! Recipes look delicious! Here is one that we make every year in the fall….to die for! It’s called Apple Taffy Pizza. Super simple and easy!

    We want to start an apple orchard tradition with our little one, too! This will be her first fall season :) Those recipes look great! I can’t wait to try them out!

    Here is an applesauce bar with frosting recipe that I love!

    Ingredients

    1/4 cup butter or margarine, softened
    2/3 cup brown sugar
    1 egg
    1 cup applesauce *(I usually make my own)
    1 cup all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon pumpkin pie spice

    1 1/2 cups confectioners’ sugar
    3 tablespoons margarine, melted
    1 tablespoon milk
    1 teaspoon vanilla extract

    Directions

    Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
    In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
    Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
    In a small bowl, mix together the confectioners’ sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

    My easy go to recipe each fall is crockpot applesauce. Simply peel and core 3-4 lbs of apples. Slice and throw in crockpot. Cook 6-8 hours mashing up apples about half way thru. So many variations but I love to add some cinnamon and craisins half way thru. Delicious!

      I always made mine on the stove too, but after trying the crock pot this weekend I will only go that route from now on – easy and delicious! The recipe I used called for 10 large apples, but I just filled the crock pot about 3/4 the way full. Put the cored/peeled/cut apples, 1/2 cup of water and 1/2 cup sugar in the crock pot and cover. I cooked on high for 3-4 hours, but you can also do low for 6-8 hours. Stir and enjoy! Add any extra sugar or cinnamon to taste, if needed.

    MMM apple season!
    Something I haven’t done in a few years is… Dried Apples. (I don’t have a dehydrator yet!)

    Slice as many apples as you would like into pieces 1/4″ thick or less. Peel or no peel–up to you.
    Soak the apples in a mixture of equal-parts lemon juice and water.

    After soaking, place the apples on a cake rack on top of a cookie sheet. If you don’t have a cake rack then place the slices directly on cookie sheet.

    Preheat oven to 140 (or the lowest temp on your oven) Bake for 6 hours. If your apples are directly on a cookie sheet, flip them halfway through.

    Store them fresh in a sealed container for a week, or freeze them in bags for two days, and then you can store them for up to 6-12 months in a cool, dry place.

    I have been making a lot of homemade applesauce lately! Cook about 4 apples in a pot ( I add about 2 oz of water) and cook til apples are soft, then mash til the consistency you like your applesauce, then add in some raw sugar or vanilla or cinnamon. I have tried it all 3 ways and they are equally delicious.

    I was looking for healthy breakfast alternatives and found this one:

    Apple Pie Breakfast Bulgar

    1/4 cup bulgar
    3/4 cup diced apple
    1/2 tsp cinnamon
    1/2 tsp vanilla
    1 cup water
    2 tbsp Greek yogurt
    1 tbsp walnuts (optional)

    Soak bulgar then mix all ingredients except yogurt and walnuts in a microwave safe bowl. Microwave on high for 3 minutes. Serve with yogurt and walnuts on top.
